Sunrise Chicken

2 – 3 lbs. chicken thighs or breasts
1/2 scallion, diced
2 cloves garlic, diced
1/2 cup ketchup
1/4 cup brown sugar
1/4 cup soy sauce
Canola oil
Salt and pepper

Salt and pepper chicken. Brown skin-side in pan and set aside. Preheat oven to 350.

Saute shallot and garlic lightly in canola oil for a few minutes, or until soft. Add the remaining ingredients (catsup, brown sugar, and soy sauce), stir, and heat until boiling. Spray a glass baking pan lightly with PAM and place chicken inside, skin-side up. Pour glaze on top and bake, uncovered. For thighs, cook from 45 minutes to an hour. For breasts, cook one hour.

Serves 4.
