Zucchini Banana Bread

Don’t laugh. This is very good (especially right out of the oven, with plenty of butter). It is also a way to use zucchini (which we tend to have too much of this time of year) and overripe bananas.

2 cups all-purpose flour
1 cup whole wheat flour (I use half graham flour, half regular whole wheat)
1 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
4 eggs
1 large zucchini
3 ripe bananas
1 cup vegetable oil

Preheat oven to 350. Combine all dry ingredients in large bowl. Using food processor, blend zucchini, banana, eggs, and oil. Combine wet and dry ingredients, pour into a large loaf pan, and bake for 1 hour and fifteen minutes.

Makes a large loaf.
